Ingredients
  

  • 3 large avocados cut into small chunks
  • 1 pint of cherry tomatoes chopped into small pieces
  • 4 ounces of plain feta cheese crumbled
  • 1 small bunch of fresh parsley finely chopped
  • 1 tablespoon olive oil
  • 1 1/2 tablespoons red wine vinegar
  • 1/2 teaspoon garlic powder or more to taste
  • Salt and pepper to taste
  • 1/4 cup finely chopped fresh onion or 1 teaspoon onion powder optional
  • 1 bag of tortilla chips for serving

Method
 

  1. In a bowl, mix together all of the ingredients except for the avocados.
  2. Refrigerate the mixture for a few hours or overnight to let the flavors blend, then chop the avocados and gently fold them in right before serving.

Notes

I’ve also tried making this with cottage cheese instead of feta, and it turned out surprisingly delicious—so good!
You can absolutely use fresh garlic and any type of tomato you prefer. I personally enjoy using cherry tomatoes because they have more skin and less of the juicy interior.
