Meat:
  • 2 lbs beef chuck roast cut into chunks
  • 1 tablespoon grapeseed oil
Consommé:
  • 7 dried ancho chiles stems and seeds removed
  • 5 dried guajillo chiles stems and seeds removed
  • 4 dried chiles de árbol stems and seeds removed
  • 1 onion peeled and halved
  • 6 garlic cloves
  • 4 vine-ripened tomatoes
  • 1 tablespoon whole black peppercorns
  • 1/2 stick of cinnamon
  • 1 tablespoon Mexican oregano
  • 4 cups beef stock
  • 2 tablespoons Bayou City Garlic Pepper seasoning
  • Salt and pepper to taste

  • Fresh cilantro chopped, for garnish
