Meat:
- 2 lbs beef chuck roast cut into chunks
- 1 tablespoon grapeseed oil
Consommé:
- 7 dried ancho chiles stems and seeds removed
- 5 dried guajillo chiles stems and seeds removed
- 4 dried chiles de árbol stems and seeds removed
- 1 onion peeled and halved
- 6 garlic cloves
- 4 vine-ripened tomatoes
- 1 tablespoon whole black peppercorns
- 1/2 stick of cinnamon
- 1 tablespoon Mexican oregano
- 4 cups beef stock
- 2 tablespoons Bayou City Garlic Pepper seasoning
- Salt and pepper to taste
Tacos:
- Fresh cilantro chopped, for garnish
- Minced onion for topping
- Lime wedges for serving
- Corn tortillas
- Oaxaca cheese or your preferred melting cheese
