Blueberry Pie Overnight Oats

Blueberry Pie Overnight Oats are a flavorful and nutritious breakfast inspired by the classic dessert, combining creamy oats, juicy blueberries, and warm spices for a delicious morning treat. Ingredients
  

  • 1/2 cup plus 2 tablespoons of gluten-free old-fashioned rolled oats large flakes
  • 1/2 cup of your preferred nut milk I used unsweetened vanilla almond milk
  • 5 tablespoons of vanilla coconut yogurt
  • 1/4 teaspoon pure vanilla extract
  • 1 tablespoon of your choice of natural sweetener: pure maple syrup rice malt syrup, date nectar, or raw honey
  • 1/2 cup of fresh organic blueberries
  • 1 tablespoon chia seeds
  • A handful of crumbled walnuts or granola for the crumble-style topping
  • For the Blueberry Chia Compote Jam:
  • This makes roughly 1 cup with plenty left over to enjoy on toast or other snacks. If you’d prefer to skip this step, you can substitute with a no-sugar-added organic wild blueberry jam.
  • 2 cups fresh blueberries
  • 1 generous teaspoon of lemon zest
  • 2.5 tablespoons of freshly squeezed lemon juice
  • 2 tablespoons of pure maple syrup
  • 2.5 tablespoons of chia seeds
  • 1/2 teaspoon vanilla extract

Method
 

  1. In a small mason jar or container, combine all of the ingredients from the first list. Stir thoroughly to make sure the oats are fully coated in the yogurt and nut milk mixture.
  2. To make the blueberry chia compote, place all the compote ingredients into a small saucepan over medium heat. As the blueberries begin to burst, use a wooden spoon to gently mash them. Increase the heat to medium-high and bring the mixture to a gentle boil. Cook for about 5 to 8 minutes, stirring frequently, until it thickens. Let it cool completely, then taste and adjust sweetness if needed.
  3. Add 1 tablespoon of the cooled blueberry chia compote to the oat mixture in your container and stir to combine.
  4. Refrigerate the jar or container overnight or for a minimum of 4 hours to allow the oats to soften and absorb the flavors.
  5. When ready to serve, top with an additional tablespoon of the blueberry chia compote, a few fresh blueberries, and a sprinkle of crumbled walnuts.
