Bulgarian meat and cheese sandwiches are a delicious and hearty meal that blends rich meats, flavorful cheeses, and rustic bread into a satisfying dish. With endless customization options, they can be enjoyed in different ways while maintaining their traditional Bulgarian essence.

Ingredients
  

  • 1 pound 450 g minced meat (see notes)
  • Approximately 8 slices of bread
  • 1 egg optional
  • 1 ½ cups 200 g grated cheese (see notes)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried savory see notes
  • teaspoon ground fenugreek see notes
  • ½ teaspoon paprika optional
  • ½ teaspoon ground cumin optional
  • ½ teaspoon dried thyme optional

Instructions
 

  • Preheat the oven to 400°F (220°C).
  • In a bowl, thoroughly mix the minced meat, grated cheese, egg, and spices. Use a butter knife or spoon to evenly spread the mixture over the bread slices.
  • Place the slices on a large baking tray lined with parchment paper.
  • Switch the oven to top heat only.
  • Bake the sandwiches for about 20 minutes, or until the meat is fully browned.
  • Serve immediately.

Notes

Meat: The ideal option is a mixture of pork and beef, but you can also choose either one on its own.
Cheese: While the original recipe uses Bulgarian kashkaval, you can substitute with any yellow cheese of your choice, such as cheddar, gouda, emmental, or others.
