Preheat the oven to 400°F and grease a 9x13-inch baking dish with non-stick spray.
Evenly spread the cut potatoes in the baking dish. Drizzle with 1 tablespoon of olive oil and toss to coat. Bake the potatoes in the preheated oven for 40 minutes.
While the potatoes are cooking, whisk together the remaining olive oil, paprika, garlic powder, salt, and pepper. Add the diced chicken to the mixture and stir to coat.
Once the potatoes are finished baking, carefully remove them from the oven. Pour the seasoned diced chicken over the potatoes and gently toss everything together.
Return the dish to the oven and bake, uncovered, for 15 minutes or until the chicken is cooked through. Remove from the oven and sprinkle the top with cheddar cheese, chopped bacon, and green onions.
Bake for another 5 minutes, or until the cheese is melted. Let the dish stand for 5 minutes before serving. Enjoy with sour cream if desired.
