Bring water to a boil in a saucepan. Add rice and stir. Reduce heat, cover, and simmer for 20 minutes. Once cooked, set the rice aside and let it cool completely.
Heat a large skillet or wok for 2 minutes. Once hot, add vegetable oil, bean sprouts, and onions. Mix well and cook for 3 minutes.
Next, add the cooled rice and shrimp to the skillet, stirring constantly. Cook for another 3 minutes.
Then, add the eggs, green onion, soy sauce, salt, pepper, and sesame oil. Stir continuously for 4 minutes until the eggs are cooked and everything is well-mixed.
