Creamy spicy garlic noodles

Ingredients
  

  • ▢3.5 ounces 1 package ramen noodles or your preferred type of noodles
  • ▢6 garlic cloves finely minced
  • ▢1 shallot finely minced
  • ▢1/4 cup thinly sliced scallions
  • ▢2 teaspoons Gochugaru Korean chili flakes
  • ▢1 teaspoon chili flakes
  • ▢1 teaspoon sesame seeds
  • ▢A pinch of salt and sugar
  • ▢1/4 cup neutral oil such as canola, vegetable, or avocado
  • ▢1 teaspoon sesame oil
  • ▢2 teaspoons soy sauce
  • ▢A dash of rice wine vinegar to taste
  • ▢Top with sliced green onions and sesame seeds
  • ▢Toss with your choice of protein

Instructions
 

  • In a small pot, heat your oil until it reaches a simmer. Once heated, let it cool for 2-3 minutes before adding it to your mixture.
  • Meanwhile, prepare the spicy garlic mix. In a bowl, combine the minced garlic, shallot, green onions, gochugaru, chili flakes, sesame seeds, salt, and sugar. Set aside.
  • Once the oil is hot but not boiling, pour it over the spicy garlic mixture (this prevents the garlic from burning).
  • Next, add the sesame oil, soy sauce, and rice wine vinegar. Mix well and set aside.
  • In a skillet, heat and cook your choice of protein (we're using plant-based chicken here). At the same time, bring water to a boil in a pot and cook your ramen noodles.
  • Once the ramen noodles are cooked and your chicken is crispy and fully cooked, toss both the noodles and chicken into the sauce. You can also slice or cube the chicken before tossing it in. Mix everything well until fully combined, then top with sesame seeds and green onions before serving.
