- Preheat the oven to 375°F and lightly grease a large baking sheet. Set it aside.
- Place the potato wedges in a large bowl, drizzle with olive oil, and toss to coat. In a small bowl, whisk together the salt, garlic powder, and Italian seasoning. Sprinkle the shredded parmesan over the potato wedges, tossing to coat, then add the seasoning mixture.
- Arrange the potato wedges on the prepared baking sheet in a single layer, with the skin side down. Bake for 25-35 minutes, or until the potatoes are fork-tender and golden. Finish by sprinkling with freshly chopped parsley and serve with dressing for dipping.
