Easy BBQ Chicken Quesadillas

Ingredients
  

  • 8 flour tortillas 2 per quesadilla
  • 2 cups shredded chicken*
  • cups shredded Monterey Jack cheese
  • ½ cup BBQ sauce plus extra for serving
  • ½ cup red onion thinly sliced
  • cup cilantro chopped (including leaves and stems)

Method
 

  1. Prepare the filling. Combine the shredded chicken and BBQ sauce, mixing until the chicken is evenly coated to your preference.
  2. Assemble and cook. Heat a large sauté pan over medium-high heat, then place one tortilla in the pan as it heats up. Top the tortilla with a handful of shredded cheese, followed by the BBQ chicken, sliced onion, cilantro, and another layer of cheese. Place a second tortilla on top, and cook for a few minutes until the cheese begins to melt and the bottom tortilla turns golden brown. Flip the quesadilla and cook until the second side is golden and crispy.
  3. Serve. Slide the quesadilla out of the pan and cut it into 4-6 pieces. Serve immediately with extra BBQ sauce on the side.

Notes

How to make shredded chicken at home:
Season 1 to 1½ pounds of chicken tenders with salt and pepper.
Bake at 400°F for 15–18 minutes.
Shred the chicken using two large forks.
