Easy Low Carb Salmon Patties!

Ingredients
  

  • 2 cups cooked salmon fresh, canned, or leftover
  • 2 large eggs
  • 1/4 cup almond flour for low-carb or coconut flour if preferred
  • 2 tablespoons mayonnaise sugar-free
  • 1 tablespoon Dijon mustard
  • 2 tablespoons finely chopped parsley
  • 2 tablespoons finely chopped green onions
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil or avocado oil for frying

Method
 

Step 1: Prepare the Salmon
  1. If using canned salmon, drain it thoroughly and remove any bones and skin if desired. If using fresh salmon, cook it ahead of time by baking, grilling, or pan-searing, then flake it into small pieces.
Step 2: Mix the Ingredients
  1. In a large bowl, combine the salmon, eggs, almond flour, mayonnaise, Dijon mustard, parsley, green onions, garlic powder, onion powder, paprika, salt, and pepper. Mix until well combined.
Step 3: Form the Patties
  1. Divide the mixture into equal portions and shape them into patties about 3 inches wide and 1/2 inch thick. If the mixture feels too wet, add a bit more almond flour to help bind it.
Step 4: Cook the Patties
  1. Heat the olive oil in a large skillet over medium heat. Cook the patties for 3-4 minutes per side or until golden brown and cooked through. Avoid overcrowding the skillet to ensure even cooking.
Step 5: Serve and Enjoy
  1. Once cooked, transfer the patties to a plate lined with paper towels to absorb any excess oil. Serve hot with your favorite low-carb sides or dipping sauces.
