Ingredients
  

  • 8 slices of brioche or challah bread
  • 4 ounces of softened cream cheese
  • 2 tablespoons powdered sugar plus extra for dusting, if desired
  • ½ cup sliced fresh strawberries
  • ¼ cup strawberry jam
  • 2 large eggs
  • 3 tablespoons milk
  • 2 tablespoons butter for frying

Method
 

  1. In a small bowl, combine the softened cream cheese and powdered sugar, mixing until the texture is smooth and creamy.
  2. Spread this cream cheese mixture evenly over one side of four slices of bread.
  3. Layer sliced strawberries and a spoonful of strawberry jam on top of the cream cheese, then place the remaining slices of bread on top to create sandwiches.
  4. In a shallow bowl, whisk together the eggs and milk until fully blended.
  5. Dip each sandwich into the egg mixture, making sure both sides are well coated.
  6. Heat a large skillet over medium heat and add 1 tablespoon of butter. Once melted, place the sandwiches in the skillet and cook for 2–3 minutes per side, or until each is golden brown and crisp.
  7. Transfer the sandwiches to a paper towel-lined plate to drain any excess butter. Dust with powdered sugar before serving.

Notes

For added crunch, mix in some chopped nuts like almonds or pecans with the cream cheese filling.
Store any leftovers in the fridge for up to 2 days or freeze them for as long as 1 month; reheat in a skillet or oven until hot and crisp.
To change up the flavor, try using raspberry or apricot jam instead of strawberry.
