Ingredients
  

For the Chicken:
  • 1 lb 450 g boneless, skinless chicken breasts, diced into bite-sized pieces
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic finely minced
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste
For the Pasta:
  • 300 g 10 oz pasta of your choice (penne, fettuccine, etc.)
  • 2 tablespoons unsalted butter
  • 2 cloves garlic finely minced
  • 1 1/2 cups 360 ml heavy cream
  • 1/2 cup 50 g freshly grated Parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons chopped fresh parsley plus more for garnish

Method
 

Cook the Pasta:
  1. Start by bringing a large pot of salted water to a boil. Add your pasta and cook according to the package directions until al dente. Once done, drain the pasta and set it aside.
Prepare the Chicken Bites:
  1. Season the chicken pieces with paprika, garlic powder, salt, and black pepper. Heat olive oil in a large skillet over medium heat. Add the seasoned chicken and cook for about 5 to 7 minutes, stirring now and then, until the chicken is golden and fully cooked. Add the butter and minced garlic to the pan, stirring well to coat the chicken in the garlic butter mixture. Let it cook for another 1 to 2 minutes, then remove the chicken from the skillet and set it aside.
Make the Creamy Parmesan Sauce:
  1. Using the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until aromatic. Pour in the heavy cream and stir to combine. Bring it to a gentle simmer before adding the Parmesan cheese and Italian seasoning. Stir the mixture for 2 to 3 minutes until the cheese has melted and the sauce begins to thicken slightly.
Combine Pasta and Sauce:
  1. Return the cooked pasta to the skillet with the creamy Parmesan sauce. Toss well to ensure all the pasta is coated evenly. Stir in the chopped parsley and adjust seasoning with salt and pepper to taste.
Serve:
  1. Dish up the creamy pasta onto plates and top generously with the garlic butter chicken bites. Finish with a sprinkle of extra parsley for garnish and serve immediately.

Notes

For an added burst of flavor, sprinkle a pinch of red pepper flakes into the sauce for a spicy kick.
Swap the chicken for shrimp or tofu to switch up the protein option.
