Ingredients
  

  • 2 cups of mashed potatoes fresh or leftover
  • 5 tablespoons of cornstarch or arrowroot powder
  • Cooking spray

Instructions
 

  • Place the mashed potatoes in a bowl and add the cornstarch. Mix until a dough forms, resembling a thick gnocchi dough that holds its shape well. If needed, add more cornstarch or flour to adjust the consistency.
  • With clean hands, roll the dough into balls slightly smaller than a golf ball.
  • Arrange the balls in an air fryer basket and generously spray them with oil. Air fry at 450°F for 15 to 20 minutes, or until they turn golden brown on the outside.
  • Serve and enjoy immediately!

Notes

These potato pops are perfect with ketchup, aioli, or vegan green goddess sauce—try it and thank me later!
If you don’t have cornstarch or arrowroot powder, a small amount of flour will work as a binder for the potato balls.
For added flavor and texture, roll the potato pops in seeds, cornmeal, or breadcrumbs before baking. Then, spray with oil and cook as instructed.
Feel free to season your mashed potatoes before forming the dough to lock in your favorite flavors.
No air fryer? No problem! Simply bake them in the oven on a lined baking sheet. Preheat the oven, and they should take about the same amount of time to cook.
