- Place the mashed potatoes in a bowl and add the cornstarch. Mix until a dough forms, resembling a thick gnocchi dough that holds its shape well. If needed, add more cornstarch or flour to adjust the consistency.
- With clean hands, roll the dough into balls slightly smaller than a golf ball.
- Arrange the balls in an air fryer basket and generously spray them with oil. Air fry at 450°F for 15 to 20 minutes, or until they turn golden brown on the outside.
- Serve and enjoy immediately!
