- In a bowl, combine olive oil, garlic, lemon juice, oregano, paprika, salt, and pepper. Add the chicken strips and toss to coat evenly. Let the chicken marinate for at least 30 minutes (or overnight for enhanced flavor).
- Preheat your grill or grill pan to medium-high heat. Cook the marinated chicken for 5-7 minutes per side, or until fully cooked, reaching an internal temperature of 165°F.
- To make the tzatziki sauce, mix grated cucumber, yogurt, garlic, lemon juice, dill, salt, and pepper in a bowl. Chill until ready to serve.
- Warm the pita bread, then layer it with the grilled chicken, tzatziki sauce, and fresh vegetables. Roll up the pita and serve.
