Total Time 45 minutes
Servings: 4

Ingredients

  • 1 pound of boneless skinless chicken breasts
  • 3 tablespoons of extra virgin olive oil
  • 3 cloves of garlic minced
  • Juice of 1 lemon approximately 2 tablespoons
  • 1 tablespoon of dried oregano
  • 1 teaspoon of smoked paprika
  • Salt and pepper to taste
  • 4 warm pita bread rounds
  • 1 cup of tzatziki sauce store-bought or homemade
  • Fresh vegetables: sliced tomatoes red onion, and shredded lettuce

Method

  1. In a bowl, combine olive oil, garlic, lemon juice, oregano, paprika, salt, and pepper. Add the chicken strips and toss to coat evenly. Let the chicken marinate for at least 30 minutes (or overnight for enhanced flavor).
  2. Preheat your grill or grill pan to medium-high heat. Cook the marinated chicken for 5-7 minutes per side, or until fully cooked, reaching an internal temperature of 165°F.
  3. To make the tzatziki sauce, mix grated cucumber, yogurt, garlic, lemon juice, dill, salt, and pepper in a bowl. Chill until ready to serve.
  4. Warm the pita bread, then layer it with the grilled chicken, tzatziki sauce, and fresh vegetables. Roll up the pita and serve.

Notes

For added flavor variations, experiment with different herbs in the marinade or try adding feta cheese as a topping.
