Peel and slice the peaches, then set them aside. Spread ricotta cheese evenly over each slice of bread. On one slice, layer the peach slices and drizzle with honey; on the other slice, add the cheddar cheese. Spread butter on the outside of each slice of bread. Heat a panini press or a skillet over medium-low heat. Once hot, place the sandwiches in and cook until the cheese is melted, lowering the heat to low if the bread starts to brown too quickly. If using any optional ingredients, remove the top slice of bread after the cheese has melted and add them before closing the sandwich again. Serve immediately, as this sandwich is best enjoyed warm.
