Honeycrisp Apple and Feta Salad

Honeycrisp Apple and Feta Salad combines crisp apples, tangy feta, leafy greens, and crunchy nuts in a flavorful and nutritious dish that’s easy to make and endlessly adaptable. Perfect as a side or main, it brings together freshness, balance, and visual appeal in every bite.

Ingredients
  

For the Salad:

  • 4 cups of mixed greens such as arugula spinach, or a spring mix
  • 2 Honeycrisp apples thinly sliced
  • ½ cup 75 g crumbled feta cheese
  • cup 40 g toasted walnuts or pecans
  • ¼ cup 40 g dried cranberries or pomegranate seeds
  • ¼ cup thinly sliced red onion optional

For the Honey Mustard Vinaigrette:

  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper to taste

Instructions
 

Make the Vinaigrette:

  • In a small mixing bowl or jar, combine the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and black pepper. Whisk until well blended. Taste and adjust the seasoning as needed.

Build the Salad:

  • Place the mixed greens in a large serving bowl. Layer the sliced Honeycrisp apples, crumbled feta cheese, toasted walnuts, dried cranberries or pomegranate seeds, and red onion (if using) on top of the greens.

Add the Dressing:

  • Right before serving, pour the honey mustard vinaigrette over the salad. Gently toss to evenly coat all ingredients.

To Serve:

  • Enjoy immediately as a refreshing side dish or a light and satisfying main course.

Notes

To boost the protein content, add grilled chicken, roasted turkey, or chickpeas on top.
For a sweeter twist, use candied nuts in place of plain toasted ones.
If preferred, swap the feta with goat cheese for a different flavor profile.
