4cupsof mixed greens such as arugulaspinach, or a spring mix
2Honeycrisp applesthinly sliced
½cup75 g crumbled feta cheese
⅓cup40 g toasted walnuts or pecans
¼cup40 g dried cranberries or pomegranate seeds
¼cupthinly sliced red onionoptional
For the Honey Mustard Vinaigrette:
3tablespoonsolive oil
1tablespoonapple cider vinegar
1tablespoonhoney
1teaspoonDijon mustard
Salt and freshly ground black pepperto taste
Instructions
Make the Vinaigrette:
In a small mixing bowl or jar, combine the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and black pepper. Whisk until well blended. Taste and adjust the seasoning as needed.
Build the Salad:
Place the mixed greens in a large serving bowl. Layer the sliced Honeycrisp apples, crumbled feta cheese, toasted walnuts, dried cranberries or pomegranate seeds, and red onion (if using) on top of the greens.
Add the Dressing:
