Make the Vinaigrette:
- In a small mixing bowl or jar, combine the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and black pepper. Whisk until well blended. Taste and adjust the seasoning as needed.
Build the Salad:
- Place the mixed greens in a large serving bowl. Layer the sliced Honeycrisp apples, crumbled feta cheese, toasted walnuts, dried cranberries or pomegranate seeds, and red onion (if using) on top of the greens.
Add the Dressing:
- Right before serving, pour the honey mustard vinaigrette over the salad. Gently toss to evenly coat all ingredients.
To Serve:
- Enjoy immediately as a refreshing side dish or a light and satisfying main course.
Notes
To boost the protein content, add grilled chicken, roasted turkey, or chickpeas on top.
