Ingredients
  

  • 4 large bell peppers any color, halved and seeded
  • 1 lb ground beef turkey, or chicken
  • 1 cup cauliflower rice for low-carb
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • 1/2 cup diced tomatoes no added sugar
  • 2 cloves garlic minced
  • 1/4 cup chopped onions
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

Method
 

Step 1: Prepare the Bell Peppers
  1. Preheat your oven to 375°F (190°C). Cut the bell peppers in half, remove the seeds and membranes, and place them in a baking dish.
Step 2: Cook the Filling
  1. Heat olive oil in a large skillet over medium heat. Add the onions and garlic, sauté until translucent. Stir in the ground meat and cook until browned. Add the cauliflower rice, diced tomatoes, smoked paprika, cumin, chili powder, salt, and pepper. Simmer for 5-7 minutes until well combined.
Step 3: Stuff the Peppers
  1. Spoon the filling into the prepared bell pepper halves. Top each pepper with shredded cheddar cheese.
Step 4: Bake the Peppers
  1. Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
Step 5: Serve and Enjoy
  1. Garnish the stuffed bell peppers with fresh parsley or cilantro and serve hot.
