For the Lavender Buttercream Filling:
  • ½ cup unsalted butter softened
  • 2 cups powdered sugar

  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • A few drops of purple food coloring optional
Garnish:
  • Thin slices of lemon
  • Fresh sprigs of lavender

Method

Steps
    Making the Cookies:
    1. Preheat the Oven: Set your oven to 350°F (175°C) and line two baking sheets with parchment paper.
    2. Mix the Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set this mixture aside.
    3. Cream the Butter and Sugar: In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes. Add the egg, vanilla extract, and lemon zest, mixing until fully incorporated.
    4. Combine the Mixtures: Slowly add the dry ingredients to the butter mixture, stirring just until combined. Be careful not to overmix.
    5. Roll Out the Dough: On a lightly floured surface, roll out the dough to about ¼ inch thickness. Use a round cookie cutter to cut out the cookies and transfer them to the prepared baking sheets.
    6. Bake: Bake the cookies for 8-10 minutes, or until the edges just begin to turn golden. Remove from the oven and let them cool completely on a wire rack.
    Preparing the Lavender Buttercream:
    1. Cream the Butter: In a large bowl, beat the softened butter until smooth and creamy.
    2. Add the Dry Ingredients: Gradually add the powdered sugar, a little at a time, mixing until fully incorporated.
    3. Infuse with Lavender: Stir in the ground culinary lavender, heavy cream, and vanilla extract. If you want a more vibrant color, add a few drops of purple food coloring.
    4. Beat Until Fluffy: Continue to beat the buttercream mixture until it’s light and fluffy, about 2-3 minutes.
    Assembling the Cookies:
    1. Fill the Cookies: Once the cookies are completely cool, spread or pipe a generous layer of lavender buttercream onto the flat side of half the cookies.
    2. Create the Sandwiches: Place another cookie on top, gently pressing to form a sandwich.
    3. Add Lavender Buttercream on Top: Pipe a small swirl of lavender buttercream on top of each assembled sandwich for a beautiful and flavorful finishing touch.
    4. Garnish: Top each cookie with a thin slice of lemon and a fresh lavender sprig for a final elegant touch.

    Notes

Culinary lavender is the best choice because it’s safe for consumption and provides a gentler, more balanced flavor. Regular lavender can be too strong and bitter for use in desserts.
Perfect Texture: To achieve the perfect texture, avoid overbaking the cookies. They should be firm but not browned, maintaining a soft and delicate consistency.
Food Coloring: While optional, adding food coloring gives the buttercream a lovely lavender hue, enhancing both the look and the flavor of the cookies.
