Servings: 12

Ingredients

  • For the Rolls:
  • ▢ 8 oz feta cheese crumbled — use a high-quality variety for bold, tangy flavor
  • ▢ 1 cup ricotta cheese — adds creaminess and helps mellow the saltiness of the feta
  • ▢ 1 teaspoon fresh thyme leaves optional — offers a subtle, earthy note to the filling
  • ▢ 6 sheets phyllo pastry — thaw if frozen then cut each sheet in half lengthwise to make 12 smaller sheets
  • ▢ 1/4 cup melted butter or olive oil — for brushing each layer of phyllo ensuring a golden, crispy finish
For the Chili Honey:
  • ▢ 1/4 cup honey — choose a light pourable honey for smooth drizzling
  • ▢ 1/2 teaspoon red chili flakes — adjust the amount to suit your preferred spice level

Method

Prepare the Filling:
  1. In a medium mixing bowl, combine the crumbled feta, ricotta cheese, and fresh thyme leaves if using. Mix thoroughly until the mixture is smooth and the cheeses are evenly blended. Set aside.
Prepare the Phyllo Pastry:
  1. Carefully unroll the phyllo pastry sheets and keep them covered with a slightly damp kitchen towel to prevent them from drying out. Slice each sheet in half lengthwise so you end up with 12 strips in total.
Assemble the Rolls:
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Place one strip of phyllo pastry on a clean, flat surface and gently brush it with melted butter or olive oil using a pastry brush. Spoon approximately 1 tablespoon of the cheese filling near one end of the strip. Fold both sides of the phyllo inward over the filling, then roll it up tightly to form a compact roll. Place the finished roll seam-side down on the prepared baking sheet. Repeat this process with the remaining phyllo strips and filling.
Bake the Rolls:
  1. Arrange the prepared rolls evenly on the baking sheet, leaving some space between each one. Brush the tops with a bit more melted butter or olive oil to promote browning. Bake in the preheated oven for 15 to 20 minutes, or until the rolls are golden and crisp.
Make the Chili Honey:
  1. While the rolls are baking, add 1/4 cup of honey to a small saucepan and warm it gently over low heat. Stir in 1/2 teaspoon of red chili flakes and allow the honey to infuse with the chili flavor for 1 to 2 minutes. Remove the pan from heat.
Finish and Serve:
  1. When the rolls are baked and golden, remove them from the oven and allow them to cool slightly. Drizzle the warm chili honey generously over the rolls, or serve it on the side as a dipping sauce. Garnish with extra thyme leaves if desired for added flavor and a pop of color.

Notes

Always keep the phyllo pastry covered with a damp kitchen towel while you work to prevent it from drying out and becoming brittle. For those who enjoy a spicier kick, feel free to increase the quantity of chili flakes in the honey to suit your heat preference. These feta rolls are also great for prepping in advance—assemble them and store them in the refrigerator until you’re ready to bake. Since feta is the key flavor component in this dish, be sure to use a high-quality version for the best taste and texture. If you're looking to switch up the flavor, you can substitute the ricotta with goat cheese for a tangy edge or cream cheese for extra smoothness.
